Hot Sesame Chicken and Avocado Salad
This is a surprisingly quick and very tasty meal that makes a great dinner and if you make extra a perfect lunch the next day. The avocado makes it rich in monounsaturated fatty acids ( the good ones) and is regarded as a ‘super food’ high in vitamin e and potassium. It also contains more protein than any other fruit. Avocados are a rich source of carotenoids which act as a nutrient booster, enabling the body to absorb nutrients in other foods.
2 large skinless chicken breast fillets- the best you can afford.
3 tbsp wholegrain mustard- I always use more!
Juice of 1 fresh lemon
1 tbsp thin honey
½ tbs sunflower oil
2 ripe avocado stoned, peeled and sliced
A couple handfuls of your salad of choice- we use homegrown rocket and spinach but lettuce works just as well.
2 tbsp sesame seeds
1 tsp sesame oil- optional
freshly ground black pepper.
1.Cut the chicken into finger sized strips and marinate with the mustard, lemon juice, black pepper and honey in a bowl. I always leave it for an hour but you can just stir and cook straight away with the sesame oil. While this is cooking cut the avocado up and prepare the salad then add the sesame seeds to the chicken and cook for another minute until they begin to change colour then dish up with the salad and drizzle over the seame oil if using.
You may want to serve with steamed veg or some brown rice if you are feeling particularly hungry as Rob is most of the time!
